Pavlova (pronounced pav-LOV-vuh) is a dessert named after the Russian ballerina Anna Pavlova. Its meringue base is crisp on the outside and soft on the inside and typically crowned with whipped cream and fruit, such as strawberries, kiwi, or pomegranate seeds. Made with lilac sugar, this pavlova tastes as ethereal as it looks. I like to serve it with a little lime sorbet nestled in each lilac cloud and a drizzle of lilac blackberry syrup that lets your senses be transported. Serves 10.

1 cup plus 2 tablespoons lilac sugar, divided

2 tablespoons cornstarch

4 egg whites

¼ teaspoon cream of tartar

½ teaspoon lemon juice
